MARTINI RESTAURANT
Since joining forces in July 2000 to purchase Martini Restaurant, owners Nunzio, Franco and Luigi have created a true Italian restaurant run by Italians. The atmosphere is busy, welcoming, friendly and fun, while providing a professional, knowledgeable and attentive service.

4 chicken breasts, cut into pieces
2 medium sized onions, finely chopped
1 table spoon grated garlic
1 table spoon grated ginger
1 tea spoon tomato puree
1 large tomato chopped
3/4 of a tea spoon turmeric powder
1 tea spoon chilli powder
1 tea spoon gharam masallaa
1 tea spoon curry powder
1 tea spoon cumin powder
1 and a half tea spoons coriander powder
4 table spoons mustard oil or alternatively sun flower oil
2 table spoons fennel leaves
2 table spoons of fresh coriander and extra coriander for garnishing
4 table spoons of natural plain yogurt
1. Finely chop the black olives tomatoes, red onion, garlic
2. Sweat all chopped ingredients in 50g of butter until the onions is soft
3. Add the breadcrumbs and stir in
4. Allow to cool
5. Mix in the egg and a good pinch of salt and pepper
6. Slice a small pocket into the underside of the chicken breast
7. Insert a good amount of the stuffing and close
8. Season the chicken breast and place into a hot pan, skin side down
9. Put into an oven at gas mark 6, for approximately 20mins, turning once
